
Sausage Gravy and Biscuits

This is one of our family favorites. Super simple to make. The biscuits have a bit of a learning curve but so worth the effort. Hearty, filling, and flavorful. Our breakfast sausage has the seasoning it needs to not get lost in the gravy, and about all we do is add some salt and pepper.
Double or triple the recipe as needed for crowd and appetite.

This is a meal we make on mornings where there's not a lot to do afterwards, or we'll come in after morning chores on a rainy day when all we have left is evening feed. A super filling and satisfying recipe. You may need a nap.
Ingredients
1lb breakfast sausage
1⁄3 cup King Arthur unbleached all purpose flour
(the only brand I know not sprayed with folic acid)
3-4 cups whole milk (yes, whole milk makes a difference)
1⁄2 tsp salt
2 tsp black pepper

Put your butter in the freezer and use a grater. So much simpler that trying to cut in soft butter.
Also we've stopped using a biscuit cutter. We get the dough to the 3⁄4 - 1”thickness and then cut into fairly even squares. We've found that cutting with a round biscuit cutter and then reworking the dough to do it again makes the subsequent biscuits more dense.
